One Pot Mexican Rice Casserole

One Pot Mexican Rice Casserole is a excellent flavorful, short and smooth floor pork recipe!  Your entire family will love this tasty casserole full of beef, rice, corn, and tons of taco taste!

This casserole tastes similar to everybody’s preferred eating place-style Mexican rice.  Except, that it's miles turned into a complete, hearty, meal in half-hour or much less!  This rice casserole has always been a staple in my house as it’s some thing we are able to all agree upon.  It used to be something that I might prepare and bake inside the oven.  Until I found out I may want to just make this right into a stovetop one pan dish.  The rice simmers within the pan proper in conjunction with the cooked floor pork and onion, corn, salsa, tomato sauce, and seasonings for exquisite flavor!  After your rice is smooth you can stir to your favourite shredded cheese, and top with inexperienced onions in case you’d like.  We also really revel in this with a further facet of salsa and a dollop of bitter cream!

INGREDIENTS:

  • 1 Pound Ground Beef
  • Salt & Pepper, To Taste
  • 1 Teaspoon Garlic Powder
  • 2 Tablespoons Taco Seasoning
  • 1 Cup Long Grain White Rice, SEE NOTE
  • 1 1/2 Cups Beef Broth
  • 1/2 Cup Salsa
  • 1 15 Ounce Can Corn, Drained
  • 1 Small Onion, Diced
  • 8 Ounces Tomato Sauce
  • 1 Cup Shredded Cheese

INSTRUCTIONS:

  1. Cook the ground beef and onion together with salt and pepper to taste in a large skillet over medium high heat until beef is no longer pink. Drain grease if necessary.
  2. Return the pan to the stove and sprinkle the beef with the garlic powder and taco seasoning.
  3. Stir in the rice, broth, corn, tomato sauce, and salsa.
  4. Bring mixture to a boil. Cover, reduce heat and simmer for 18-20 minutes until rice is tender.
  5. Top with cheese and return the lid to the pan for 2-3 minutes until cheese is melted.

Notes:

  • NOTE ON RICE:  I always use long grain white rice, but you can use instant rice if that's what you have on hand.  Keep in mind for instant rice you will only need to simmer the mixture for about 5-7 minutes to soften the rice.
